Need help with wiring

I am having some problems with my uss-8-64 cavalier machine. I am troubleshooting and need some guidance from you pros. The compressor won’t shut off; well it shuts off maybe once a day which probably the safety is shutting off the unit.  The machine is full and the t-stat is on the 3rd setting. I have already disconnected one wire from the T-stat and it still runs.  Here are some pics of the wiring and the wiring diagram.

If the machine is wired properly & compressor still runs with one of the thermostat wires lifted from the thermostats terminals , ( I'm assuming that's where you've remove the wire from) it should shut off,  then it's getting line voltage back-feed into it. which isn't likley.

Note that the schematic shown doesn't involve the compressor or thermostat circuts at all, it ( the wiring block shown in the schematic ) only gets it's line voltage from the compressor harness/wiring block down on the compressor deck,

so if you've disconected the wire(s) from either pin/socket # 1-[plain] or #8-[ribbed] you are only disconnecting the line voltage into the machines vending & lighting circut, be sure to try it from teh back of the T-Stat proper, & watch out, it's a "hot" connection ( tape the loose end  up to prevent shorting it out on the chassis/shock)

I tried it from the back of the t-stat and it still runs.
Could I be low on freon?

can anyone help?  I don't want to loose this machine.  The ice build up is getting bad

Follow your T/S wires all the way back to the junction box.
      They must be touching each other somewhere.
