How do i remove the evaporator from the cav 22 chest without damaging anything?  It still wont run.  Everytime I move the chest something else stops or starts working.

HAve you rewired the system? If things are stoping and starting after being moved it sounds like you have a short. I would try rewiring the entire cooling system before doing anything.

Not yet Josh, I'm planning on taking everything out and placing it on the work surface to see what all it needs to get it working.

I know it needs coolant, and new fans and fan motors.

Follow the copper lines and wires from the compressor up. Remove covers and sheet metal until the evaporator is exposed. Main caution would be to AVOID kinking copper lines.
