So working on my first project a 1940 wall mount U Select It 5 cent candy machine. In the attached pic there a lever that can hold up a arm with a quarter size disk on it. What is it for? I'm guessing something for servicing the machine maybe?

I have not seen this before...
Although, this is a good photo, I cannot tell where it is located; above the coin mech(slug rejector), I'll assume the right side, but where at up & down...
Any other linkage connected to the arm or the disk?

My six cents,

It's on the right side below the coin mech. The disc when up touches the back of the tracks.
