Just picked this up today!

Does anyone know where I can get the letter inserts like in the last pic?

try a restaurant supply company or a sign shop maybe?

I have a Faygo light u menu board of similar size & design to yours & I wouldn't mind getting some letters also for it.

I too have a lighted Coke sign like yours and struggled to get letters to fit it.  Everywhere I looked for new letters they were all too tall to fit.  I was extremely lucky when I found someone on eBay who had some NOS still in the original envelope and not even broken apart yet.
