Well I think I figured out how the coin return mechanism works... the lever that looks like a shepherds crook was put in upside down. Now I need to find a couple of parts to make it work. The first is the knob/handle that fits through the slot in the housing into the lever (green & yellow circles mark a threaded hole in the lever that lines up with a slot in the housing). The second is a guess on my part. I'm assuming that there should be a spring that connects to the post (red circle marks the post. It has a groove that would suggest a C-Clip) and possibly the back side of the knob/handle. The spring would keep the lever arm pulled in the upright position.
Anyone know if you can buy the coin return knob?
Anyone know if my assumption on the spring is correct?
Anyone have any pics of a working assembly?

You are correct about the spring, it and the knob are available from our suppliers on this site.

Glen - Found the knob but, no spring, on sodajerkworks site. Maybe Funtronics for the spring?
Terry - a pic or description on how to properly mount the spring would be great.
