I have never worked on or seen one of these, so had a question..
I'm assuming these are air cooled or water cooled units?

the one I am looking at to restore for a guy has a coil system on the bottom of the tank, but no circulating fan or anything like that? just the coils, and at thermostat probe. 

any help or insight would be appreciated.

        I believe that is all there is John.   The bottles just sit on a "cold plate".

      On the same subject, here is one local.
     When this guy called me and said he had a Lyon, I asked if it could possibly be a Lyon 500? hopefull 
     It is really just the Lyon 200 cabinet.

The bottle rack, which is missing or not in your picture, hangs down some but does not rest on the coils. There also should be a pre-cool rack on the side, which straddles the coils somewhat, but again does not rest on them. The top is not sealed airtight either.
You fill it up with water and the coils keep the water cold and thus the drinks cold. Drain the water as you would a Westinghouse Junior. Make sure you get the liner back in correctly - drain should be front right; otherwise, you're draining over the electricals. Oo

SO still wondering is this air cooled or Water Chill cooled? from what Tom is saying , sounds like Water Chilled? or is it optional?

I always was under the impression that the electric jr's were water coolers.....is the liner stainless steel?  If so, it's a water cooler.

I don't have the machine in my shop currently so only going off photos... from what I can tell it looks more stainless as well.. so thinking water?
