Thank you the help. 

I have a new issue now.  The machine is constantly getting warmer.  The thermostat is now all the way cold and it is staying around 41 degrees.  The compressor is not always running, so I would assume this new thermostat isn't working correctly.  Anyone have any ideas?  Thanks in advance.

Bit confusing. Is product staying at 41 degrees?  Machine full of product? Compressor only runs when needed. I forget on USS if cab fan should run all the time or not. Stand by. Issues will get sorted.

Yes, it is full of product.  The evaporator fan is always running as it should.  It just seems like the compressor isn't running long enough.  Maybe I shouldn't have the thermostat probe actually touching the evaporator?

That might be something to change. Move it away from contact with anything else.
