Light-up sign electrical restoration???

I have a couple of back-lit signs I am restoring....most of these old signs have a standard two-wire with a two prong plug.  I'm thinking it might be better to upgrade to a three-wire, three prong plug with a ground to the can.....what configuration do most of you guys prefer?

I could go either way on this; however, lighting fixtures I would be inclined to keep as original wiring, especially if you can locate specialty wire if utilized.
Other items, such as jukes & soda machines/coolers, I would definitely wire with a ground.

Higher power, moving parts stuff like Jim mentioned I would definitely go three wire on, as for lights, stick with two.  If you think about most plug in lamps you can buy in stores these days, they all have two prong plugs.

Thanks for the replies guys, I'm going to stick with a 2-wire configuration and place an order with Grand Brass.
