Procedure for disassembly

For those who have fountain dispenser knowledge:
How does this come apart? I can unscrew the collar and remove the dispenser head and I can unscrew the a collar type nut on the rear, but I get stuck there. I don't want to break something but I want to clean it up inside.

Yes, go easy, the collar ring on the back has a spanner notches ( the small milled flat areas on the diameter of the nut seen in your pictures) that fit a matching wrench ( called a spanner wrench or course) that will let you turn it without crushing ( distorting ) it so it will unscrew easier, I cant recall ( I used to maintain one of these at the summer camp I worked at as a teenager) but i seem to remember that possibly/maybe it's a left-hand thread on the back,  the front knurled nut just unscrews with hand-pressure ( if it's not glued in place by dried up syrup) & then the nozzle pulls free towards you , mind the "O"-rings don't get lost or torn.  You can pickup a small spanner wrench set at Home depot down the plumbing isle , it's use to disassemble sink basin & water-faucet nuts & such.

We cleaned ours ( back in the day) with a small steam cleaner around the dispenser nozzles & it seemed to heat up the nut enough and release any dried syrup to help loosen it without damaging the plastics.

Once loose, the body of the dispenser pulls out from the rear. hope this helps, it's been a while since I had one apart myself.

PS, I think there was a set-screw that retained the plastic hose-barb on the backside of the pre-mix nozzle

I just thought of this, Cornelius may still have the disassembly guide online at their site. quite a few of these are still in service today as beer tappers ( same style valve)

It was easier than I thought. I was under the impression that I had to disassemble each spout in order to take the plexiglass off. I unscrewed the four screws on the plexi-glass and the whole assembly popped out. Everything came apart easy after that. The back side had a RH thread, but the front had a LH thread.
Is it www.cornelius.com ?
I went to it, but most of the links I went to were referring to much newer devices than my dispenser.

   Here's a link for all the parts you need for those pre-mix valves.

   Your machine has the old Coke red valve bodies which are faded pretty bad, I don't believe you can get them anymore as all the new bodies are black.

   These are about as simple as they come, if you have any specific questions about them I can sure enlighten you.

I don't see why you couldn't put a nice coat of gloss red on them, hopefully that wouldn't impart any taste issues thru the plastic, I wouldn't think so.

I was looking again at the first post and wondering if you figured out how to remove the inlet fitting on the back of the valve assy, that circular black piece.
Loosen the screw on top far enough that it doesn't fall out, slightly pull down on the threaded fitting and pull outwards at the same time, don't lose the o-ring up inside the shank, very important.

Alot of times the shank is cracked right in this area due to freezing or stress, be careful when you pressure it up.

Also when cleaning these the area you want to address is the shank and compensator inside the valve, this area is very important for good smooth foam free flow, the entire valve needs to be disassembled and soaked in a mild bleach solution for best results.

Once I removed the plexiglass that the valves were mounted on, each valve broke down easy. I soaked all the parts in a vinegar/water solution. I got each one working smoothly now. If I start using the dispenser, then I'll break it down again -  soak everything in a bleach solution and probably replace the O-rings, etc.
