Can anyone explain the operation of the main door latch on the Vendo 110 / 6 Case?? 

I'm trying to understand the operation of the red button in the middle of the latch....when you close the door latch and push in the red button, how do you go about opening it again??  I end up wiggling it until the red button pops out!!   Oo

I don't know if I can explain it fully, as I have only read about it and seen pictures and it only pertains to the 6-case vertical cooler as far as I know.
Every 110/6-case that I have owned have had locking key latches.
The pushbutton feature was for ease of loading the machine by anyone working for the establishment where the machine was located.
The locking latches have a key activated teardrop cam that pushes a spring loaded plate and locking bar down allowing the lock housing to be lifted up. When the housing is lifted up, the main door latches are also lifted allowing the main door to be opened.
I would imagine the the pushbutton utilized the same functions. Unscrew the two small flat head screws at the bottom of the lock housing and you can removed the whole lock assembly.

Would it be possible to change out the Red Botton for a Lock??

You might check with Fun-Tronics (301) 371-5246 or www.sodajerkworks also. They probably carry it, but I am not certain.
You need to unscrew the small flat head screws at the bottom of the housing and there should be (if it is anything like the lock) a spring that is up inside and there is also a spring clip that holds the button (or lock) cylinder in place.
I would be interested in your pushbutton if you are getting rid of it!

Does anyone have any tips, suggestions, or pictures on changing out the button to a lock??  I purchased a lock online....but not sure if it is the correct one.  (See attached picture.)

That looks like the correct lock.
Just like I said above:
To remove the lock (and pushbutton I presume), you unscrew the two small screws at the bottom of the housing and then there is a long fork shaped spring-like clip that is pushed up onto the lock to hold it in place. There is no nut used to hold the lock in the housing. The whole lock can be pulled right through the mounting hole.
There is nothing to it!
Are you going to sell your pushbutton? I'm still interested in one.
