What size hp compressor would work in most coke machines? 1/3, 1/4, 1/5, 1/6 ?

All of the above...
Simply depends on the size of the condenser coil, evaporator coil,
length and size of the copper tubing, which refrigerant you're using,
temperature range, size of the box, etc....simple!
There really is no "one size fits all" compressor. Usually, a 1/4 hp
in the antique market will suffice.
