I hate the way my machine stops vending with 6 cans still left, and am thinking about taping the switch down.  Is there any reason not to? Or is there a better way around it?

My machine does the same thing...the main problem with doing that is it will vend the last soda...and once the last soda from any column is vended....it won't vend from any other column...why not just pull the bulb for that sold out light?

This behaviour is deliberate so when the soda guy comes to re-stock the machine, there are still enough cold ones left in there to keep people happy. If it vended every last can, and someone came along just after it was refilled, they would get a warm soda (which isn't very pleasant).

For home use in your garage/basement I don't think it would be a problem, other than maybe what Ridewithme38 said about vending the last soda from any column.
