Its not on all auctions though... I haven't figured out yet what the differences are...

I noticed that too.
I haven't tried to sell anything lately.
Maybe when you are setting up your listing, you have the choice.

I also noticed that the winner's name is displayed after the auction is over.
If you click on bids, then you get the "Bidder 1, 2, 3..." list.

I think I remember hearing that the bidders ID was going to be hidden in auctions over a certain price.  If it was under $50.00 others can see, but once above only the seller can see.
