I just picked up a VMC 110 (Pepsi) and the main door just opened right up. So now I have the main door open and I have the key for the lock, but it doesn't seem to engage the handle to "pop" open. I have access to the back panel (main door liner)...is there any way to help that lock pop open or do I have to drill the lock out?

With the key engaged in the Open/unlocked position, you should just have to push in slightly at the bottom of the lock handle & it should pop out towards you

The bottom of the lock is what pivots out toward you, so you'd push in the top. The lock's cam is a teardrop shape and you may have to hold the key in the unlock position while you pivot the lock assembly out.
If all else fails, you do have access to the backside of the lock from behind the liner.

I tried pushing in at the top and bottom...I also tried lifting up and/or down on the locking levers on the inside of the door at the same time...no luck. When I take the door liner off, what should I be looking for? Is it going to jump out at me and be obvious or do I have to take stuff apart to get where I need to go?

You'll see a housing that, if my memory serves me, is secured by a single nut. You'll be able to access the underside and remove the pin holding the rollers and lock in place.
I found an old pic of what you'll see...
