The temperature range span of themostats set points is called the differential, it varies depending on the type & model of the unit being used.   It varies by application, say a freezer vs a refrigerator

Most beverage 'stats have fixed "cut-in" / "on" temperature of 40-dgrees/F and a differential of 12-degrees, so 40-12=32-degrees max. cold, the adjustment knob sets the "cut out" / "off" point between that range/span.

Often if you google the model number of your machines thermostat you will find the specifications online.
