I am trying to get the bottle door back on the machine and I was wondering how many times most people need to wind the springs?

Wind them as many times as possible......that's usually 3 to 4 turns

Have a scar or two from this. Time to purchase new vice grips once they don't hold the spring more than two turns. Ouch.
