VMC44 thermostat - A12-700 or 701 ?

I'm trying to figure out if I have the correct thermostat in my VMC44. I'm just getting back to putting the machine into service and I'm not sure about the temps it's running.
Air temp about half way up the empty bottle rack is ranging from 26F to 38F with the thermostat on #3. I'm running the A12-700, but was wondering if maybe I shouldn't have went with the 701.
I'm not sure what's "normal" for an empty machine.
Any help appreciated.

Keeping the machine at least 3/4 full of product would yield accurate results. I am uncertain as to the functionality of the thermostat models you listed...
Ensure the fan blade is correct for evaporator motor rotation also.

I'm flying a little blind here. I put the machine back together the way I received it. Which way should the air be moving over the evaporator ?
I should be able to fill it up this weekend and get some better readings.
As for the thermostats, from what I can tell, the 700 regulates from 37F to 26F and the 701 is from 41F to 31F at their warmest settings.

I use the RANCO A30-2210 on almost all of my repairs, it's an air-sensing type that has a Range of 30F to 43F with a differential of 8 deg. F
Plus it comes with an attractive face-plate & control knob.
